02 / HOW IT COMES TOGETHER

Break down frozen surimi and blend it with your recipe ingredients. Controlled mixing prepares an even paste for the forming stage.
Feed the prepared paste to the forming unit and create a continuous sheet. Sheet dimensions and feeding settings are matched to the target product.
Set the sheet through controlled heating, then cool it before further processing. The heating and conveying configuration is selected around the recipe and output.
Cut the prepared sheet into fine strands, then gather them into a continuous bundle to form the characteristic layered texture of a crab stick.
Apply the selected surface color and wrap the formed product. Coordinate feeding and wrapping with the upstream production rhythm.
Cut the wrapped product to the required length, then connect it to a suitable packaging solution for the intended retail or foodservice format.
Plan the downstream freezing and cold-chain interface around the selected packaging format, product requirements and factory conditions.
